Chicken tagine with couscous recipe

Cooking Time 25 minutes

Ingredients (serves 4)

2 tablespoons olive oil
4 (180g each) chicken thigh fillets, trimmed, halved
1 brown onion, halved, thinly sliced
2 garlic cloves, crushed
1 tablespoon Moroccan spice mix
400g can diced tomatoes
400g can chickpeas, drained, rinsed
1 zucchini, halved, cut into 1cm pieces
1 1/2 cups couscous
coriander leaves, to serve

Method

1. Heat 1 tablespoon of oil in a large, heavy-based frying pan over high heat. Add chicken. Cook for 2 minutes each side or until light golden. Remove to a plate.

2. Reduce heat to medium. Add onion and garlic. Cook, stirring occasionally, for 2 to 3 minutes or until onion is tender. Add spice mix. Cook for 30 seconds or until aromatic.

3. Return chicken to pan. Add tomatoes, chickpeas and zucchini. Bring to the boil. Reduce heat to low. Cover and simmer, stirring occasionally, for 12 to 15 minutes or until chicken is tender and cooked through. Season with salt and pepper.

4. Meanwhile, place 11/2 cups cold water in a medium saucepan. Bring to the boil over high heat. Remove saucepan from heat. Stir in couscous. Cover and stand for 3 minutes or until liquid is absorbed. Stir couscous with a fork to separate grains.

5. Spoon couscous onto plates. Spoon over chicken tagine. Sprinkle with coriander. Serve.

Fast chicken tagine recipe


The Lebanese Recipes Kitchen (The home of delicious Lebanese Recipes and Middle Eastern food recipes) invites you to try Fast chicken tagine Recipe. Enjoy quick & easy recipes and learn how to make Fast chicken tagine. This chicken dish is full of flavour!

Ingredients (serves 4)

1kg chicken thigh fillets, halved
3 tbs chermoula spice mix or paste (see note)
2 tbs olive oil
1 onion, thinly sliced
3 garlic cloves, thinly sliced
1 lemon, thinly sliced
100g blanched almonds
140g green olives
1 cup (250ml) chicken stock
Couscous and chopped coriander, to serve

Method

1. Toss chicken with half the spice mix. Heat oil in a large pan over medium heat. Cook onion and garlic, stirring, for 2-3 minutes until softened. Remove and set aside. Add chicken to pan and cook over medium-high heat for 2-3 minutes each side until golden. Add lemon, nuts, olives, stock and remaining spice mix. Bring to the boil, then reduce heat to low, cover and simmer for 20 minutes or until chicken is cooked. Serve with couscous and coriander.

Notes
Chermoula spice mix or paste is available from delis and gourmet shops.

Grilled Moroccan Chicken

Prep Time: 35 mins
Total Time: 42 mins

Ingredients (Serves 4):

1/2 cup extra virgin olive oil (the best quality you can get)
1/4 cup chopped scallion (, white part only)
1/4 cup chopped parsley
1/4 cup chopped fresh cilantro
1 tablespoon minced garlic
2 teaspoons paprika
2 teaspoons ground cumin
1 teaspoon salt
1/4 teaspoon turmeric
1/4 teaspoon cayenne pepper
4 boneless skinless chicken breasts

Directions:

1. Combine oil, scallions, parsley, cilantro, garlic, paprika, cumin, salt, turmeric and cayenne pepper in the container of a food processor.

2. Process until smooth.

3. Rub the mixture on both sides of the chicken breasts and let stand 30 minutes.

4. Preheat the grill to medium hot.

5. Grill chicken breasts 5-7 minutes on each side, or until done.

Moroccan Beef Kebab Skewers

Prep Time: 10 mins
Total Time: 25 mins

Ingredients (Serves 4):

1 1/2-2 lbs beef stew meat, less than 1 inch thick
2 tablespoons parsley, finely chopped
1/3 cup olive oil
1/2 small onion, grated
1 tablespoon tomato paste
1 tablespoon vinegar
1/2 teaspoon salt
1/2 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder

Directions:

1. Cut any large pieces of meat in half so they will cook faster. Then place the beef cubes in a medium bowl. Chop the parsley & add it to the beef, set aside to be used later.

2. Pour the olive oil in a small glass bowl. Add the spices, vinegar & tomato paste, stir until well blended. Grate the onion & add it to the oil mixture.

3. Stir the mixture in with the beef until it is well coated. Cover with a lid & place in the refrigerator to marinate for at least 2 hours.

4. Place the beef on skewers, leaving a little gap between each piece. Grill on each side until the meat is no longer pink inside, between 10-15 minutes.

5. Serve with thick bread instead of utensils. (Moroccans eat most of their food with their right hand, using only bread to scoop up the meal).

Clever moms (just like you) reveal how they make their travel memorable while saving major cash.

Even if today's tight-fisted economy has you hoarding coupons and attempting to make cappuccinos at home, you can still have a family vacation that's not a guilt trip. Here are tips from budget-smart travelers (including the GH team) that show you how to spend less money — without sacrificing an ounce of fun.

Hit the Pricey Spots Off-Season

You may dream of an island escape in frigid winter, but Vanessa Druckman, a Columbus, OH, food blogger and mother of three, has been heading to the Caribbean in sultry August for years. She and her husband, Steve — who were turned off by winter's crowds and high prices — join his family in luxe hotels like the Ritz-Carlton in Grand Cayman, happily lopping 20 to 30 percent off in-season rates. Druckman's own family usually needs just one room with two double beds and a crib. "Not only do we save a lot on hotel and airfare, but we love how secluded it feels. Nothing's crowded if you travel just before hurricane season starts in mid-August. It's hot, but no hotter than the East Coast or Southwest, and there's no better place to cool down than in that turquoise water," she says. "And we enjoy having snorkeling boats to ourselves instead of being wedged in like sardines." The family also shops for "pay for, say, three nights, get one free" hotel deals to stretch their dollars.

Tip to try: When searching hotel sites online (say, starwoodhotels.com, hilton.com, hyatt.com, and marriott.com), scan for what are called hotel specials or packages: These deals often include extras like museum tickets, airport transportation, and room taxes for free or a very small charge.

Try a House Swap

Kim Orlando, of Greenwich, CT, mother of three and the founder of travelingmom.com, is all about her annual two-week summer house swap with a family in Hermosa Beach, CA. She and her husband, Romano, and their kids head back to the Los Angeles area, where Kim and Romano used to live, to spend time at the beach and see old friends — and their swappers get to be a train ride away from New York City and its attractions. This past summer, the Orlandos booked a second swap with a new family through homeexchange.com, which charges about $120 for yearly membership. Beyond that, the stay is (delight-) fully free, and about half the swappers on the site also offer use of a car. "My husband was a reluctant house-swapper. He's a real Felix Unger type — he has a collection of pocketknives, which he hid before we left. But by the last house swap, he was saying, 'Here's the key, here's the car,'" says Orlando. "I always say the best thing about house swaps is that the ketchup, mustard, and beach toys are already there. And nobody wants to pay 40 or 50 bucks for breakfast. With a swap, you have a kitchen, and the kids have their own bedrooms, so there's less bickering."

Orlando recommends having several get-to-know-you phone chats with the swappers before you leave, and paying for your house to be cleaned at the beginning of your visitors' stay (so you don't have to mop while you pack) as well as at the end so everything will be shipshape for your return. Also, check with your own insurance company, but many policies cover exchange partners as invited guests and perhaps even as permitted drivers, and offer coverage as such. Another way to go: List your home on Vacation Rentals by Owner (vrbo.com), and when someone bites at your offer, scan the site for what's available out of town for a similar price and rent it for the same time period.

Tip to try: Want to list your home but don't live, say, by the beach or in a glamorous city? Play up your area's selling points: Being surrounded by woods, or being just a stroll from a historical society, may be precisely what thrills another homeowner.

Just Say No to Hotel Bills

...and camp under the stars instead. Unplugging from our high-tech world gives kids a memorable time communing with nature. Granted, it's not for everyone (it's a tad awkward to change a diaper in a tent), but those who are game will find themselves in a gorgeous setting, bonding over life's simple pleasures. And it's one of the best bargains in America. Instead of paying $200 or more per night in season at the Bar Harbor Inn in Bar Harbor, ME, you could stay in stunning Acadia National Park for about $20 per night — saving enough for at least a car payment! Beware, though: Popular parks, like Yosemite, can fill up months ahead of time in peak season. If you want to camp there between July 15 and August 14, for example, reservations open online or by phone on March 15 at 10 a.m. ET.

Tip to try: For guidance on how to pick a specific park, we asked Alexander Altvater, a ranger for the National Park Service at Thomas Edison National Historical Park in West Orange, NJ, for his advice; he suggests checking out your local state parks as well as national ones. His favorites: Villanueva in New Mexico, Dead Horse Point in Utah, and Custer State Park in the South Dakota Black Hills. Go to nps.gov for genuine National Park Service campsites, and check out stateparks.com, too.

Get Cooking

If you're renting a condo or cottage on vacation, cooking in is cheaper and cozier than dining out, and is a better way to share family time. Jean and Terry Rose, parents of six from Montclair, NJ, head to Bethany Beach, DE, for a week every summer with extended family, and each branch of the clan takes control of the kitchen for one night of the week, using favorite recipes they've brought along. "Shopping together at farmstands is also part of the fun for us," says Jean. Plus, at the dinner table you won't hear that "ka-ching!" in your head when the kids ask for another soda the way you would if you were dining out.

Tip to try: Prior to your trip, ask pals for favorite "new" dishes they've made recently, or visit our meal types for ideas:

Let Someone Else Do the Driving

It may not be as comfy as your car, but Greyhound offers reasonable fares — much cheaper than flying — and kids who travel with adults get 25 percent off; check greyhound.com for details. (Newer buses in the Northeast now have Wi-Fi.) Or take Amtrak, which posts Weekly Specials in the Deals section on its Website (amtrak.com) that can be booked online from Tuesday through Friday; we saw fares of up to 25 percent off.

Ask for a Concierge Floor

When booking a hotel room, "concierge floors often cost a little more, but sometimes a hotel will upgrade you just because you've asked. Either way, it's worth it," says Jean Chatzky, Today's financial editor and the author of The Difference: How Anyone Can Prosper in Even the Toughest Times. "These floors have lounges where you can get free breakfast, snacks, and sodas, plus hors d'oeuvres at night. They save my family a lot on food." (At Hilton hotels, ask for the Executive Floor.) Rates and restrictions vary by location, but the extra charge (from $30 up) can be well worth it if you're feeding a family.

Don't Leave Home Without...

...your ID cards. Students, people in the military, seniors, and even AAA members can get discounts on fares and even entrance fees at museums, theme parks, and more. Check out the Websites of your destination to see what kinds of discounts are possible before you visit for the biggest savings with the least disappointment.

You could save big on your next trip to some favorite destinations.

1. Disney Parks

Dollar stores offer significant savings on everything from paper products to dairy. But which products are worth it? Good Housekeeping helps you decide.


It's no surprise that in this difficult economy everyone's racing to dollar stores. In fact, according to the business pages, Family Dollar Stores Inc. is one of the few retailers that announced that they did better than expected so far this year.

We recently sent three experts from the Good Housekeeping Research Institute to several dollar stores, both in the city and the suburbs, to investigate what's worth buying ...and not.

In general, the news was good--but you do need to exercise some caution. Here are some do's and don'ts to keep in mind when shopping at dollar stores:
  • DO stock up on paper goods. We saw substantial savings on items like paper towels, napkins, and gift paper.
  • DO buy cleaning products, such as laundry detergent and soap.
  • DO check out pantry items, like cereal, crackers, and soda.
  • DON'T buy food or beverages without examining the expiration labels. If there's no date, don't buy it!
  • DON'T buy a product if the seal, cap, or packaging has been tampered with or opened.
  • DON'T buy a major brand if the packaging doesn't look familiar. It may be a fake. (We found this was common with cosmetics.)
  • DON'T purchase extension cords or power outlets without looking for the UL (Underwriters Laboratories) label. This symbol means the product has successfully met standards for safety compliance.

Ingredients:

3 -4 aubergines
3/4 cup olive oil
1 small grated onion
1 tablespoon vinegar
1 -2 garlic clove, crushed
salt and pepper
1 large tomato, chopped
black olives (garnish)
green pepper (garnish)

Preparation:

1 Wash aubergines, place in baking pan and bake in moderate oven (about 350°F) for about one hour or until soft.
2 Allow the skin to turn black so as to give a smoky flavour to the salad.
3 Skin aubergines while still hot and chop in small pieces.
4 Mix with onion, garlic, tomatoes, oil, vinegar, salt and pepper.
5 Garnish with olives and pepper rings.
6 Serve with roast meat, and grilled or fried fish or as appetizer.
7 Serves six.

Lebanese Lentil/Rice Pilaf With Blackened Onions Recipe

Ingredients:

4 tablespoons olive oil
1 medium onion, chopped
3 garlic cloves, minced
2 teaspoons ground cumin
3/4 teaspoon ground cinnamon
1/2 teaspoon ground allspice
2 (14 ounce) cans vegetable broth
3/4 cup dried lentils, rinsed, picked over
3/4 cup long-grain white rice
2 large onions, sliced
3 tomatoes, quartered lengthwise
1 cucumber, peeled, cut into rounds
plain yogurt
chopped fresh mint

Preparation:

1 Heat 2 tablespoons oil in large saucepan over medium-high heat.

2 Add chopped onion and next 4 ingredients; sauté until onion softens, about 4 minutes.
 
3 Add broth and lentils; bring to boil.
 
4 Reduce heat to medium-low and simmer, covered, 10 minutes.
 
5 Stir in rice; return to boil.
 
6 Reduce heat to medium-low; cover and cook until liquid is absorbed and rice and lentils are tender, about 15 minutes longer.
 
7 Meanwhile, heat 2 tablespoons oil in heavy large skillet over medium-high heat.
 
8 Add sliced onions; sauté until soft and beginning to blacken, about 20 minutes.
 
9 Season pilaf to taste with salt and pepper.
 
10 Transfer to plates; top with blackened onions.
 
11 Place tomatoes and cucumber alongside.
 
12 Top pilaf with dollop of yogurt.
 
13 Sprinkle with mint.

Lebanese Bean Stew Recipe

Serves 4

Ingredients:

1 cup dried butter beans, soaked overnight
1 lb lean ground meat
1 (14 ounce) can diced tomatoes
1 cup water
1 tomato-flavored bouillon cubes or 1 vegetable bouillon cube
1/4 bunch fresh cilantro, chopped fine
3 garlic cloves, minced
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon cinnamon

Preparation:

1 Soak the beans in water overnight. Drain and rinse.

2 Cook the meat and garlic with olive oil in a pan.

3 Once the meat is all browned, add the rest of the ingredients with the exception of the cilantro. Stir to deglaze the pan.

4 Bring to a boil, add the cilantro, cover and simmer until the beans are fully cooked (between 30 and 40 minutes).

5 You might need to add some water if it becomes too dry, so check on it every 10 minutes.

6 Eat over cooked white rice.

Spice up white fish fillets with a flavoured butter and serve with fluffy sweet potato mash

Serves 2

Ingredients

2 large sweet potatoes , peeled and cut into chunks
2 tsp butter , softened
1 garlic clove , crushed
0.5-1 tsp harissa (Belazu is good)
zest 1 lemon
small handful coriander , most chopped, rest left whole
fingertip-size piece fresh root ginger , finely grated
2 skinless white fish fillets (look for sustainably caught)

Method

1. Heat oven to 200C/fan 180C/gas 6. Cook the sweet potatoes in boiling, salted water for about 10 mins or until just tender when pierced with a knife. Meanwhile, mix together the butter with the garlic, harissa, lemon zest, chopped coriander and some seasoning. When the potatoes are ready, drain thoroughly, mash with the ginger and seasoning, then keep warm.

2. Place the fish in a roasting tin, season, then spread half the flavoured butter over each fillet. Roast for about 8 mins until just cooked through. Serve with the ginger mash and some green veg.

Curry powder and cinnamon are the kick behind a slow-cooker filled with onions, carrots, plums and skinned chicken thighs. Save money and lose virtually no time by skinning your own chicken thighs.

Ingredients

1 medium onion, coarsely chopped (1/2 cup)
8 oz. baby carrots with tops, trimmed, or baby carrots, halved lengthwise if large
1/2 cup pitted dried plums (prunes)
1 14-oz. can reduced-sodium chicken broth
8 bone-in chicken thighs, skinned
1-1/4 tsp. curry powder
1/2 tsp. salt
1/2 tsp. ground cinnamon

Directions

1. In a 4- to 5-quart slow cooker combine onion and carrots. Add plums and broth. Top with chicken. In a small bowl combine curry powder, salt, and cinnamon. Sprinkle over chicken.

2. Cover and cook on low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours. Remove chicken, fruit, and vegetables from cooker with a slotted spoon. Spoon some of the cooking juices on each serving. Makes 4 servings.

Ingredients:

2 cups water
1 lemon
2 tablespoons garlic oil
1/2 teaspoon ground cinnamon
1 cup couscous
1 (15 ounce) can garbanzo beans, rinsed and drained
1/2 cup golden raisin
salt and pepper

Directions:

1 Finely grate peel from lemon to equal 1 1/2 tsp, set aside.
2 Squeeze 2 TBsp juice from lemon.
3 Combine 2 cups water. lemon juice, garlic oil, and ground cinnamon in medium saucepan.
4 Bring to boil, simmer 1 minute.
5 Remove from heat.
6 Stir in couscous.
7 Cover and let stand about 5 minutes, until water almost absorbed.
8 Mix in garbanzo beans, golden raisins, and reserved lemon peel.
9 Cover and let stand 5 minutes longer.
10 Fluff couscous with fork.
11 Season to taste with salt and pepper.
12 Transfer to bowl and serve.

Try this Roasted pumpkin couscous recipe for a tasty side dish idea

Ingredients (serves 4)

750g butternut pumpkin, peeled, cut into 2cm pieces
1 medium red onion, halved, cut into wedges
1 tablespoon olive oil
2 teaspoons Moroccan seasoning
1 cup couscous
1 chicken stock cube
1 cup boiling water
2 x 125g cans chickpeas, drained, rinsed
1/4 cup toasted pine nuts
1/4 cup roughly chopped fresh coriander leaves

Method

1. Preheat oven to 220°C/200°C fan-forced. Line a baking tray with baking paper. Place pumpkin and onion in a bowl. Add oil and seasoning. Toss to coat. Arrange mixture, in a single layer, on prepared tray. Bake for 20 minutes or until pumpkin is golden and tender.

2. Meanwhile, place couscous in a heatproof bowl. Add crumbled stock cube and boiling water. Stir to combine. Stand, covered, for 5 minutes or until liquid has absorbed. Stir with a fork to separate grains. Add pumpkin mixture, chickpeas, pine nuts and coriander. Toss gently to combine. Serve.

Notes
Serve with pan-fried white fish or lamb cutlets.

Ingredients

2 whole(s) (1 pound each) eggplants , each halved lengthwise
4 clove(s) garlic, unpeeled
3 tablespoon(s) tahini, sesame puree
3 tablespoon(s) fresh lemon juice
Salt
1/4 cup(s) loosely packed fresh cilantro or mint leaves, chopped
Toasted or grilled pita wedges
Carrot and cucumber sticks and red or yellow pepper slices

Directions

1. Preheat oven to 450 degrees F. Line a 15 1/2" by 10 1/2" jelly-roll pan with nonstick foil (or use regular foil and spray with nonstick cooking spray). Place eggplant halves, skin-sides up, in foil-lined pan. Wrap garlic in foil and place in pan with eggplants. Roast vegetables 45 to 50 minutes or until eggplants are very tender and skin is shriveled and browned. Unwrap garlic. Cool eggplants and garlic until easy to handle.

2. When cool, scoop eggplants' flesh into food processor with knife blade attached. Squeeze out garlic pulp from each clove and add to food processor with tahini, lemon juice, and 3/4 teaspoon salt; pulse to coarsely chop. Spoon dip into serving bowl; stir in cilantro. Cover and refrigerate at least 2 hours. Serve dip with pita and vegetables.
