Apricot juice (Qamar el deen) - How to make Apricot juice (Qamar el deen)

Ingredients

½ Dried Apricot paste (Qamar Aldin) sheet (about 10cm X 20 cm)
4 Cups hot water
4 Tbs sugar
1 tps rose or blossom (optional)

Method

- Cut Dried apricot sheet into small pieces.
- Dissolve well in hot water.
- Add Sugar, stir then add blossom water.
- Serve cold.
- Can be served with dates or fresh apricot purée (if in season).
- Note: More water or ice can be added until obtaining the desired thickness.

Moroccan Mint Tea - How to Make Moroccan Mint Tea

Cook Time: 10 min
Level: Easy
Yield: 1 quart tea

Ingredients

4 teaspoons Moroccan or green tea leaves
24 fresh spearmint leaves, plus more for garnish
4 to 5 tablespoons sugar, or to taste
1 quart boiling water

Directions

Bring a kettle of water to a boil. Add boiling water to a teapot that holds about 4 cups water, and swirl to warm. Discard the water and add the tea, 24 mint leaves, and sugar to the teapot. Pour the quart of boiling water into the teapot and swirl once or twice to dissolve the sugar. Allow the tea to steep for 5 minutes.

Pour the tea through a strainer into small decorative Moroccan glasses or teacups. Garnish each with several fresh mint leaves.

Sahlab - Sahlab Recipe

Quick and easy to prepare Sahlab Recipe. Sahlab is traditionally prepared at home although there are boxed versions of this pudding. You can add more or less cornstarch to this recipe if preferred.

Sahlab Ingredients - Serves 3 -5
4 cups milk
1/2 cup cornstarch
1 teaspoon vanilla
Sugar (to taste)

Toppings
ground cinnamon (to taste)
unsweetened dried shredded coconut (to taste)
chopped pistachios (to taste)

Preparation
1. Combine cornstarch and water in a small cup and stir well.
2. Add milk to a soup pan or dutch oven pot.
3. Stir in cornstarch mixture in milk before it gets warm.
4. Add in vanilla and sugar.
5. Must stir constantly until it comes to a boil.
6. Let boil for 2 minutes, meanwhile still stirring.
7. Serve in dessert bowls.
8. Top with cinnamon and coconut or just chopped pistachios.
9. It's traditionally eaten hot, but I like it cold too, once it cooled off and firmed up.

Ingredients - Serves 2 persons
1 teaspoon sahlab dissolved in a 1/4 cup milk
2 cups cold milk
Sugar according to taste

Preparation
In a pot, pour the milk and the salep and milk mixture and bring to the boil, stirring, over gentle heat.

When the mixture comes to the boil, remove from the heat and place in small cups. Garnish with sprinkling of cinnamon.

Serve hot.

Moroccan Mint Tea

How to make traditional Moroccan Mint Tea.

Moroccan mint tea is a very important part of Moroccan dining

The national drink is served in glasses at all times and everywhere. It has mint flavor, is very sweet and is sometimes seasoned with orange blossoms.

Ingredients:

1 bunch mint, and mint leaves for garnish
3 teaspoons green Moroccan tea
3 tablespoons sugar or honey

Preparation:

Water: Boil water. Pour a small amount in teapot and swish around to warm the pot. Put the tea in the tea pot, put a little boiled water and swish to rinse tea with boiling water discard water from the tea, Add the mint (reserve some for garnish) and sugar in the teapot, cover with boiling water and Bring to a boil again put it on a slow flame for 1 minute. Let tea brew, stirring the leaves once or twice. Cover pot; steep at least 5 minutes.

Pour a small amount of tea into the Moroccan tea glass; pour the tea back into the teapot. Repeat 3 times to blend ingredients; garnish each colorful Moroccan tea glass with springs of mint. Add a sprinkling of orange-blossom water. Serve very hot.

Use a nice serving brass tray and colorful tea glasses to make your tea party a feast for the eyes and by using different colors of tea glasses each guest will have a different color of his own.

karkadeh Tea - karkadeh Tea Recipe

Karkadeh, carkade or karkady teay is served hot or chilled with ice. It is very popular in some parts of the Middle East, and especially in North Africa. Karkadeh Hibiscus tea is the infusion made from the calyces (sepals) of the Hibiscus sabdariffa flower.

Serves 4 persons

Ingredients:
  • 1 cup Karkadeh (Hibiscus) flowers
  • 4 cups water
  • 1 cup sugar
Preparation:
  1. Wash Karkadeh flowers well, then place in a pot with 4 cups of water over medium heat.
  2. Let boil for 5 minutes then let soak overnight.
  3. Strain the Karkadeh flowers and pour the juice in a glass pitcher. Add sugar.
  4. Stir well until all sugar dissolves.
  5. Let cool in the fridge and serve chilled.

Hibiscus flower extract has been used in many folk remedies for liver disorders and high blood pressure. The constituents of the flowers contain gossypetin, anthocyanin, and glucoside hibiscin, which may have diuretic and choleretic effects, decreasing the viscosity of the blood, reducing blood pressure and stimulating intestinal peristalsis.

The dried flower contains hibiscic acid. Root contains saponins and tartaric acid. Aspartic acid is the most common amino acid. Dried fruits also contain vitamin C and Ca oxalate; dry petals contain flavonol glucoside hibiscitrin

Arabic Coffee

Arabic coffee is one of the major drinks in Saudi Arabia and the Arabian Gulf region in general. It is served in any occasion and it's always available in any house. You can say it's prepared on daily basis for family members and guests.

Ingredients:

  • 3 cups water
  • 2 tablespoons of Arabic coffee
  • 3 tablespoons cardamom (coarsely ground)
  • 1/4 teaspoon saffron (optional)
Preparation:
  • Boil the water in a pot.
  • Add the coffee to the water and bring to a boil over low heat.
  • Remove from the heat for five minutes to allow the coffee to settle.
  • Put the cardamom in the pot, strain the coffee into it and add the saffron. Bring back to boil once and serve.
Serves 8-10 persons.
